Tomatillo-Red Pepper Salsa
Serves 12 to 15.
This simple cooked salsa highlights the citrus taste.
In a medium saucepan over medium heat, combine bell pepper, tomatillos, garlic, onion, cumin, coriander, cinnamon, oil and salt. Cook 10 minutes, stirring frequently, or until peppers are soft. Remove from heat; stir in cilantro. Let cool before serving.

In large saucepan over medium heat, combine tomatillos and juice. Bring to a boil. Add onions, bell peppers, chiles, garlic, and hot pepper flakes. Cook 20 minutes, covered, or until peppers soften. Add parsley and salt.
