The chef/owner of Ngon Vietnamese Bistro launched his food truck last year in a meticulously restored 1967 Volkswagen bus. Fun and funky, with a two-tone green paint job punctuated by Crayola-colored peace signs, the blast-from-the-past allows Truong to take his brand of locavore-meets-Vietnamese cooking beyond his charming University Avenue restaurant, in style.
