Mexican immigrants Alejandro Castillon and Conrado Badilla are living the American dream. Ten years after moving north to Minnesota, the two lifelong friends are making the Midtown Global Market a major taco destination with their Sonora Grill. This scratch kitchen leaves nothing to others, starting with perfect tortillas and filling them with eye-rollingly tender braised pork, brazenly spicy red tempura shrimp, gently fried tilapia and slow-roasted, mouth-melting beef tongue. The toppings are tops in their class, too: jazzy pickled red onions, a coolly composed salsa verde, roasted red peppers, crisp cabbage and a richly nuanced chimichurri sauce.
