At this time of year with few flowers, dandelions are a crucial food source for bees and other pollinators. And dandelions are a markedly healthy addition to the human diet, with more Vitamin A than carrots. Cook them in two changes of water if you don't like the (digestion-friendly) bitter taste, and add them to your pizza, lasagna, omelets, etc. — but leave some for the bees!
