Hopf, Carol Niederkorn 95, passed away Sept. 15, 2020 from Pancreatic cancer. Preceded in death by parents William and Irene (Hulet) Niederkorn; husband, James W. Hopf; siblings Bob Niederkorn, Betty Hoover, Lois Walley, Nancy Knox and Marilyn Chandler; grandson, Aaron Barnard; and son-in-law Al Mehlhorn. Carol was born and raised in Hastings, MN. In 1944 during WWII she went to Washington D.C. and worked at the U.S. Treasury's Procurement Dept. Following that, Carol worked at Selman AFB, Monroe, LA and was there when V-J Day was declared in Aug. 1945. When she moved back to Minneapolis, she worked at the Army Recruiting Office and represented them as a princess in the 1947 St. Paul Winter Carnival. At a Medicine Lake Mission Farms Conference, she committed her life and heart to Jesus. She was a member of Fourth Baptist Church in Minneapolis and met James Hopf at the Hospitality House in October 1947. Two weeks later he asked her to marry him. They were married November 23, 1949 until Jim died in 1999. Carol and Jim had a gift of hospitality and developed life-long friends wherever they lived. She was a homemaker, a mother of five and enjoyed traveling with friends and family. She loved playing games, doing puzzles and hosting get-togethers. An early member of Berean Baptist Church in Burnsville, she served faithfully in many capacities. She was vibrant and still driving until two months before her passing. The last two years she lived at the Orchard Path Community in Apple Valley where she made new, dear friends. She will be remembered for her warmth, faith, humor, selflessness and devotion to her family. She is survived by her sister, Jan Niederkorn; children Rebecca Hopf (Terry Forbord), Robert Hopf, Susan Harper (Robert), Cynthia Mehlhorn and Pamela Hopf; grandchildren Nathan Barnard (Imelda), Derek Harper (Emily), Brianna Bing (Ian), JD Mehlhorn (Katie), Matt Mehlhorn (Olivia), and Katie Mehlhorn; great grandchildren Suzette and Barrett Bing; Vera, Hattie and Elsie Harper; Minka and Ryah Mehlhorn; many nieces and nephews. Funeral will be held on Monday, Sept. 21 at 11 a.m. at Berean Baptist Church, Burnsville, MN (live stream at 10:45; go to youtube.com, search for bereanmn) followed by Interment at 2 p.m. at Lakewood Cemetery, Mpls, MN.
