Strawberry Fool

Serves 4.

Note: This spin on my grandmother's strawberry fool recipe whips whole-milk Greek yogurt in with the cream to give it a little more body and some tang. You can make the yogurt cream ahead and just smash in the berries at the last minute before serving. From Beth Dooley.

• 1 pint strawberries, hulled

• 2 tbsp. sugar

• 3/4 c. heavy cream

• 1/4 c. whole-milk Greek yogurt

• Fresh mint sprigs

Directions

Cut the berries into ¼-inch pieces and place in a medium bowl with the sugar. Using the back of a fork, smash with the strawberries to release their juices.

In a medium bowl, whip the cream until it holds firm peaks, then whip in the yogurt. Fold the smashed berries with their juices into the cream mixture. Place the mixture in parfait glasses or a serving bowl, and garnish with mint.
