Eichhof, Nicholas J., Jr. age 74, formerly of Shakopee. He served in the United States Navy, was a 42 year member of Shakopee American Legion Post 2, and retired from Rahr Malting of Shakopee where he worked as a Malthouse operator for 30 years. Survivors include his daughters, Shelly (Jeff) Kirchoff of Hutchinson, Lisa Eichhof of Chaska; son, David (Sue) Eichhof of Minneapolis; grandchildren, Alissa (Dustin) Petersen, Karl Christensen, Nicholas Karg, Victoria Eichhof, Drake Eichhof, Dusay Fields; great-grandchildren, Jake and Harper Petersen; sister, Beverly Gnade; also survived by many step-grand-children and step-great grandchildren.
